Chicamole Pizza

Time for some chicamole pizza!  And what, may you ask, is chicamole pizza?  Well it’s chicken and guacamole pizza of course!  What, you’ve never heard of guacamole on a pizza before?  Well, maybe it’s time you did!  I didn’t believe it at first either, but I’m definitely a believer now.  This stuff is soooo good.  So what are we waiting for? Let’s get cooking!  Here’s what you’ll need:

 

1 large chicken breast
1 Tbsp of Olive Oil (to cook chicken in)
1 tsp of Corriander
1 tsp of Cumin
1 tsp of Chili Powder
1 Clove of Garlic
1 Cup of Mozzarella Cheese
1 Cup of Cheddar Cheese (I used Extra Sharp)
1 Cup of Grape Tomatoes, halved
1 pkg of pizza dough or your favorite pizza dough recipe
1 Tbsp Olive Oil (to spread on crust)
1 recipe’s worth of quickie guacamole
Heat up 1 Tbsp of olive oil on medium heat in a large skillet.  Add your chicken, garlic, coriander, cumin, and chili powder.  Cook the chicken until no pink remains; about 8-10 minutes depending on the thickness.  Once it’s cooked, remove it from the skillet and shred/chop it into bite sized pieces. Set it aside and move on to the assemblage of your pizza.  Roll out your dough and place it on your pizza circle, preheated pizza stone, or whatever you typically use for pizza baking.  Spread a light layer of olive oil across the top of your dough and then spread on the guacamole.  Add the chicken and tomatoes and cover the whole shebang with your two cheeses.  Finally, sprinkle the cayenne pepper over the top.  Here’s what you’ll have so far:

You’ll probably notice from the picture, that I only put the cayenne on half.  I left a portion of it spice free for my three little rug rats, but I will say that even with the cayenne on it, they probably could have handled it.  And by the way, isn’t it looking beautiful?  If you’re not getting a pizza craving yet, there’s something wrong!

Place your pie in an oven preheated to 425 degrees.  Cook it for 10-12 minutes or until cheese is bubbly and just starting to brown on the edges.  Pull it out, let it set for 2-3 minutes and then cut and serve it up.  And for your viewing pleasure, the final product:
