Chicka Chicka Salad

Are you ready for some chicka chicka?  Salad that is.  There’s just something about a big, beautiful bowl of chicken salad that makes my mouth water.  This chicken salad is as easy to make as it is delicious to eat.  Here’s what you’ll need:

1 12.5 Oz. Can of Chicken
1 Heaping Tbsp of Mayo
1/2 of a Celery Stalk, chopped
1 tsp of Mrs. Dash
1 handful of dried cranberries (about an 1/8 of a cup)

Break open the can of chicken and dump it in your bowl.  Throw in the heaping Tbsp of mayo.  Make sure you don’t overdue it; good chicka chicka shouldn’t be gloppy, there should be just enough mayo to act as a glue to hold the salad together.  With a fork, mash up your chicken and combine it well with the mayo.  Now add in your dried cranberries, celery, and Mrs. Dash.  Stir together and prepare yourself to indulge in the best darn chicken salad sandwich this side of the Mississippi.


The best part about this salad is how versatile it is.  I’ve substituted a number of different fruits for the cranberries, including grapes, apples, and pears.  Experiment and see what works for you.  I promise, there’s no wrong answer when it comes to the chicka chicka.

Here’s my final product:  Chicka chicka, extra sharp Cabot Brand Cheese on Trader Joe’s Italian loaf bread (lightly buttered… yes it’s a little extra fat, but oh does it make it worth it) and thrown in the toaster oven to warm the whole beautiful package up to a toasty delicious finale.  If that doesn’t make you want to have some chicken salad right now, I don’t know what will.

    Made this for dinner and put WAY too much Mrs. Dash. Next time, no cheese but very good chicken salad and super easy.
