Buon Giorno my friends and welcome to day 2 of sandwich week. I hope everyone had a great Labor day weekend. If you stopped by yesterday and read about our Grandfather mountain woes, then you’ll be happy to know that we did indeed make it to the mountain yesterday. The weather was beautiful, and we were able to squeeze in lunch, a visit to the swinging bridge and a 2 mile hike to Black Rock; and best of all, no one got sick. All in all, it was a great way to finish off our Labor Day celebration.
But enough about me, let’s get to today’s business. First up, the giveaway winner! I threw the number of comments into random.org’s number generator and out popped number 24. To kick off sandwich week, we celebrated American style with the good ol’ fashioned burger, “turkeyed” up all snazzy for your eating pleasure. Today we’re going to head over the Atlantic (or maybe just make a stop in New York if we’re not up for the long travel) and dive into an Italian treat that we all know and love; the calzone.
This was my first time making calzones and I have to say, I even impressed myself! These babies were beautiful and delicious to boot. I’ve pretty much made everything from scratch below, but you can make this as easy or hard as you’d like but simply buying a ball of dough and some pre-jarred pizza sauce instead of making your own if you so desire. Use my filling or create your own combination of tasty insides. The sky’s the limit with this tasty sandwich treat! Let’s get rolling.
Ingredients Needed:
1 ball of your Favorite Homemade or Store Bought Pizza Dough
5 Oz of Pizza Cheese
1 Pd of Sausage
5 Oz of Pepperoni
1 Onion, Chopped
3 Cloves of Garlic
1 Tbsp of Fresh Basil (or 1 tsp Dry)
1 tsp of Oregano
11/2 Cup of Frozen Spinach
1 Jar of Pizza Sauce
OR
1 14 Oz Can of Crushed Tomatoes
1 tsp of Onion Powder
1 tsp of Oregano
1/2 tsp of Salt
1 Tbsp of Olive Oil
2 Garlic Cloves
1 Tbsp of Fresh Basil or (1 tsp Dry)
Start it off by cooking up your sausage. When your sausage is nearly cooked, add in the pepperoni and cook it up for a minute or two more until all the meat is cooked through. Drain off the fat.
Now add in the garlic, basil, oregano, and onion and let it all heat up for a good two to three minutes.
Finally, add in your frozen spinach and let it cook up and get hot. Remove the mixture from heat.
Grab your dough ball, rip a good sized piece off and roll it out about 1/4″ thick.
Grab your filling and spoon in a few decent sized spoonfuls. Be sure to leave enough room to fold it over and seal up your edges. Here’s mine.
Fold the dough over your topping and seal the edges up. I rolled my edges into the top to seal it up. Be sure to cut a few slits in the top of calzone so that steam can release as it cooks in the oven. And this is optional, but I also brushed some egg white on the tops of these beauties to help them get a nice golden brown color in the oven.
Throw them in a preheated oven set to 425 for 15-20 minutes or until the top is a nice golden brown. I cooked mine on a preheated pizza stone to ensure the bottom had a nice, crispy crust.
While your calzone is cooking, either heat up your jar of sauce or whip up a quick batch of your own. Mine is nothing amazing or spectacular but it does the job.
Add to your saucepan the tomatoes, onion powder, oregano, salt, olive oil, garlic and basil. Stir it all together and let it heat up.

Oh YUM Julie!!!!!! Calzones ares one thing I’ve been meaning to make. I don’t know why I haven’t already, I have a great pizza dough recipe and a great pizza sauce recipe. I need to make these. They look absolutely amazing. I love the filling! Thank you for sharing such a wonderful recipe (I’m going to be thinking about these all day now).

Glad you got to do the mountain thing, when I was a kid there was a swinging bridge on my Grandfathers property. Have you got a photo to share, I havent seen one of those swinging bridges forever.

I’m a calzone making queen! I’m making chicken spinach and hot sausage/pepperoni calzones this very night!
I like the idea of adding spinach. Great way to add veggies. I mean, pair this with a salad and you are good to go!

I was just looking at sausage at the community store last night – I’m taking a walk in a bit and will have to pick some up to try this.

I am the calzone queen! I keep the TJ’s dough in my freezer and pop it out when I have no idea what else to make. Yours look fare more polished and well planned though! I am going to try this sauce idea out, it looks delicious.
