Family Friendly Fridays: White Chocolate Cranberry Macadamia Nut Cookies

Ok, so I know you’re probably wondering what the heck that vote request is that I’ve dropped on the top of today’s page for all to see.  Remember my chicken and asparagus dish that I posted a month or two back?  Well I took that tasty little dish and entered it into a contest for Pacific Foods and low and behold it advanced to the final round!  And the prize, (are you ready for this?)  is two days at culinary boot camp in Napa Valley California!!

I would absolutely give my right arm to have the opportunity to do this!  However, since giving an arm doesn’t really do anyone any good, what I’ve decided to do instead, is to offer up a charitable donation to the Susan G. Komen Breast Cancer Foundation.  For every vote that you all pass on to my dish, I will in turn donate $1 to helping to find a cure to breast cancer.  This is a cause that is very close to my heart as my grandmother was recently diagnosed with breast cancer as well as a friend of mine here in the Charlotte area.  It affects way too many of us in more ways than we can express and every dollar donated helps us get one step closer to finding a cure.

Back to what we’re all here for, the recipes.  Today’s is one of my favorites.  These little beauties were perfect in every way.  I couldn’t believe how moist and tasty they turned out!  The tart of the cranberry really balanced out the sweet of the chocolate.  And well, I love macadamia nuts so they were just the cherry on top of the sundae.  Depending on how sweet you like your cookies you can add anywhere from 1/2 the bag of chips to the whole thing.  I added half and it was plenty for me.  Scott said I should have added the whole thing; he really likes his chocolate.  Either way, I know you’ll be reaching for seconds with these tasty morsels.

Alright, here’s what you’ll need to bake up a batch of these tasty treats.

Ingredients Needed:

1 Stick of Butter, Softened
1/2 Cup of Brown Sugar
1/2 Cup of White Sugar
2 Eggs
1/2 tsp of Almond Extract
1/2 tsp of Vanilla Extract
1/8 tsp of Salt
11/2 Cups of Flour
1/2 tsp of Baking Soda
3/4 Cup of Dried Cranberries
1/2 Cup of Roughly Chopped Macadamia Nuts
1/2 Pkg of White Chocolate Chips

Drop the butter and the two sugars into your mixer and cream them up good.

Now add in your eggs, and both extracts.  Mix it up well.

Add in the salt and flour and mix it up.  Now add in the soda and mix it up one more time.

Finally, throw in your nuts, berries, and chocolate and mix it up by hand.

Drop your dough in tbsp size balls onto your baking sheet.  You can grease up your sheet or use parchment paper (love the stuff).

Throw them into your oven preheated to 35o degrees for 8 to 10 minutes.  When the edges are a light golden brown pull them out and bask in their delicious, oh so tasty glory.

Just try to resist.

White Chocolate Cranberry Macadamia Nut Cookies

Ingredients:

    These look wonderful. I’ve been meaning to make these for the longest time, but keep getting distracted by chocolate chips. I’m off to vote for your recipe, I think it is such a great idea to donate. I have a cause that I give as much as I can to, so this would be a good idea to use in the future. I’m a new follower.
