Slow Cooker Minestrone with an Indian Kick

I don’t know about you, but I’m in the mood for a bowl of soup.   I love soup.  In all forms and in all flavors.  I love how it can be what you need it to be at any given moment.  Hearty when you need a big meal, comforting when you’re feeling under the weather, light when you just need a little something to curb your appetite, and healthy when you want to feel good about what you’re eating.  And let’s be honest here, between the turkey and the desserts and the leftover Halloween candy (yes, my husband and I are still wading through our kids stash), we could all use a little healthy, right?

Minestrone is one such soup and it just happens to be an absolute favorite of mine for the following reasons:

A.  It’s really healthy.

B. It’s super easy to make.

C. It’s the type soup where you can pretty much throw anything in the pot and it still tastes awesome.

D. I swear it can cure any illness you may be suffering from.  One bowl and I promise you’ll feel better than you did before you ate it.

E.  Did I mention it’s easy to make?

If I haven’t convinced you yet, take a gander at all the goodness in the bowl and see if you can resist.  I even threw a splash of Indian flavor in there to warm it up and give it a little extra yummy.

Ingredients Needed:

3 Carrots, Diced
2 Zucchini, Cut up
1 Onion, Diced
3 Celery, Chopped
1 Handful of Green Beans
3 Cloves of Garlic, Minced
1 10 Oz. Can of Garbanzo Beans
1 Pd of Cooked Lentils
1 28 Oz. Can of Tomatoes
4 Cups of Veggie Broth
1 tsp of Curry
1/2 tsp of Cumin
1/2 tsp of Garam Masala
1/2 tsp of Salt
1/4 tsp of Pepper
6 Oz. of Cooked Noodles

First up, your veggie and bean selection can be flexible.  If you’ve got it, add it!  You can’t go wrong with veggies and beans.

Alright, start out by adding the veggies into your slow cooker.

Next you’ll add in your garlic, beans, lentils and tomatoes.

Finally add in the broth, curry, cumin, garam masala, salt and pepper.  Stir it all together and cook it on high for 3-4 hours or low for 4-6.  Add your noodles in just before serving.

Time to eat.

I’m feeling healthier (and dare I say lighter?) just looking at this beautiful bowl of soup.

Ingredients:
