Candied Pecans

Yesterday was a big day here, we had snow!  I’ve been told it’s the first time since 1947 that Charlotte has had snow on Christmas day.  Being from the north, I love it when we get a load of the white stuff and seeing as it doesn’t happen all that often in the South, we took full advantage with a little sledding, a snowman and a breakout snowball fight.  Here are a few shots from the morning.

And of course no wintry day is complete without a little hot cocoa and a sweet treat.  I love these nuts because not only are they are they sweet, but they’ve got a good protein kick as well.   Throw a bowl of them on the table and watch how quickly they disappear.

Ingredients Needed:

4 Egg Whites
3/4 Cup of Brown Sugar
1 tsp of Vanilla
1/2 tsp of Cinnamon
1/4 tsp of Nutmeg
1/4 tsp of Salt
2 Pds of Pecans
4 Tbsp of Butter

First up, you’ll beat your eggs white until they are a stiff foam.

Now you’ll add in your sugar, vanilla, cinnamon, nutmeg, and salt.

Mix it together and add in your nuts.  Coat them well.

Heat up your oven to 350 degrees.

Now drop your butter on a jelly roll pan and pop it in the oven and let it melt down.  When it completely melted, bring it out, spread it around the pan and place your nuts on the pan.

Place your nuts in the oven for 20 minutes, being sure to turn once or twice.  Bring them out and cool them completely.

Are you ready to get nuts for nuts?
