Family Friendly Fridays: Honey Sweet Corn Bread

December 31, 2010 By Julie 26 Comments

New Year Eve.  Can you believe it?  I feel like the holidays blew by in a flash this year!  It’s been a whirlwind of fun, but I’ll admit that I’m ready to get back to a bit of normalcy.  With my blogoversary coming up in just a little over a month, I’ve been thinking about different ways to spruce up this little corner of the internet over the upcoming year and I’ve come up with some fun ideas that should hopefully be a hit with everyone.  Stay tuned for more information in the upcoming weeks!

Moving on to the star of the show; honey sweet corn bread.  Get ready.  I’ve been working on perfecting this bread for awhile now and I guarantee you won’t be disappointed in the results.  It’s moist, it’s flavorful, and it’s a perfect accompaniment to your cooked up batch of slow cooker chili.  To whip up a batch of this tasty quick bread treat, you’ll need to head over to your pantry and scrounge up the following cast of characters:

Ingredients Needed:

1 Cup of Corn Meal
1 Cup of Flour
4 tsp of Baking Powder
¼ Cup of White Sugar
¼ tsp of Salt
1 tsp of Vanilla
¼ Cup of Honey
1 Egg
1 Cup of Milk
2 Tbsp of Melted Butter

Start off by mixing your dry ingredients together; the corn meal, flour, baking powder, sugar, and salt.

Next up, you’ll mix together your vanilla, honey, egg, and milk.  Now add it to the dry mixture and combine well.

Finally you’ll stir in the melted butter.

Now, pour the mixture into a greased up 9×9 pan and cook it in an oven preheated to 350 degrees for 25 minutes.

All that’s left to do is pull it out, cut it up, and take a big ol’ tasty bite.  And are you ready for this?  What’s that?  You need a minute?  Your mouth is full of warm, sweet honey corn bread fresh from the oven?  My job here is done.

I hope everyone has a wonderful New Year and we’ll see you all next week!

That looks fluffy and delightful. The last time I made corn bread (from a mix) you could have used my muffins for hockey pucks!

the southerner in me finds it almost sacrilegious to have so much sweetness in a batch of corn bread, but the foodie in me loves it. 🙂

I am such a huge fan of cornbread! I wish that I could find some that was gluten-free and didn’t taste like cardboard…if you make something that fits this bill I will kiss the ground you walk on. Literally!! 🙂

Happy New Year! I hope 2011 is off to a wonderful start.
