There are a lot of great recipes roaming around; on the internet, in cookbooks, and on the shelves of home cooks and chefs just like you and me. Recipes that fill you up, make you smile, and leave you satisfied until you’re ready for your next meal. But once in great while, you stumble upon a recipe that is so good (so very very good), it reminds you of why you were put on this planet to eat. With every bite, you close your eyes just so you can focus better on the flavors. You relish every tantalizing bite, and you may even make a small groan or a swoon as you eat it. You take your time, not wanting the experience to end and when it does, you look around for a second round, not caring if you’re too full to actually eat it.
We have all had these experiences. I remember an incredible creme brulee french toast I had the privilege of eating last summer when my family took a vacation up at The Tyler Place in Vermont. I put my lips to that french toast and just about got up and started to do a happy dance right there in the dining room. We’re going back there this coming summer. I told my husband it was for the vacation, but it’s really for the french toast. It was just that good. I haven’t had an experience like that since. Until I made this recipe that is.
I don’t know what I did, or how I figured it out, but these cookies are TO DIE FOR. They are so good that I’ve been eating one with my coffee/tea at breakfast, one after eating my lunch, and one (ok maybe two) as a dessert after dinner. I just can’t stop myself. They’re moist, they’re chewy, they’re orange flavor, they’re almond flavor, they’re sweet. They’re sheer and utter heaven in a carb form. But don’t take my word for it. Cook a batch up and see for yourself.
Ingredients Needed:
1 Stick of Butter
1 Cup of Sugar
1 Can of Almond Filling*
1 Small Orange
1 Egg
1 tsp Vanilla
2 Cups of Flour
1 tsp of Baking Soda
1 Cup of Powdered Sugar
3 Tbsp of Milk
1 tsp of Vanilla (for the frosting)
* If you haven’t heard of almond filling it’s ok. I hadn’t either until my mom brought me two cans of it and said she wasn’t sure what to make with it. Mom, make these cookies. To find the almond filling, head to your grocery store and check out the baking aisle. I was told these cans (Solo is the brand) were found at Walmart next to the pie filling .
Start out as any good dessert recipe should; by creaming together your butter and sugar.
Next up you’ll add in your can of liquid gold, er, I mean almond filling, your egg, vanilla, the zest of your orange and juice from 1/2 of the orange squeezed; about 1 tablespoon’s worth.
Mix it together well and then add in the flour and the baking soda.
Once you’ve incorporated the dry ingredients, grab up a cookie sheet, line it with parchment, and spoon out heaping teaspoons of the dough.
Place your cookies in the oven at 350 degrees for 9-11 minutes. Bring them out to cool.
While the cookies are cooling, you’ll mix together your powdered sugar, milk, and vanilla extract. Once they’re cooled grab a brush (or the back of a spoon) and glaze the tops of your cookies. If you’d like to be a bit pretty like me, you can add a few slivered almonds to the top. I’m not normally this showy, but these cookies are truly worthy of the extra effort. Here’s my mess of a production line in action.
Ok. Now, pick one up, bite into it, and tell me what you think. I understand, you’ll need a second cookie before you can give me the final verdict.

I’ve found that a lot of the things I love are because they’re a taste from my childhood. But almond-flavored things are all adult for me, and I absotively love anything with almond paste or even flavor. Or amaretto. Especially amaretto. I’m going to try this recipe and then try not to eat too many.

These are wonderful! I accidentally bought almond paste rather than filling (only thing they had in my store that was made by solo), but I went ahead and made the recipe as written anyway. They came out so great! Can’t wait to try them again with filling. Worth every calorie, can’t get enough.
