Slow Cooker Lamb Curry

Yesterday was my middle guy’s birthday.  Alex turned the big 0-5.  We had apple cake, we had marble cake, we had ice cream, and tomorrow his class will have a life sized sugar cookie baked and decorated with love by both myself and Alex.  I think I might have a sugar coma just from the celebration of this one special day and I still have my youngest’s birthday as well as my own and my blog’s to get through this month (that’s right, my blogoversary is coming up in just a couple short weeks!).

Whenever I find myself over my head in sugar, which incidentally, happens every February around this time, the best way I know to get out is to cook up a dish so hearty and delicious that it erases all memory of the oversized pile of sweetness I just finished consuming.  That is, until I open up my fridge and see the caramel apple cake sitting there.

Ingredients Needed:

11/2 Pds of Cooked Lamb
1 Onion, Chopped
2 Cups of Broth (Beef or Chicken)
6 Oz. of Mushrooms, Chopped
2 Tbsp of Curry
1 Tbsp of Rosemary
2 Cloves of Garlic
2 Tbsp of Butter
2 Tbsp of Olive Oil
1 Tbsp of Garam Masala
1 tsp of Ginger
1 tsp of Salt
1/2 tsp of Fennel
1 Tbsp of Oregano
2 Large Baking Potatoes, Cubed
1 Can of Tomato Paste
1 Bunch of Cilantro, Chopped
1/2 Cup of Plain Yogurt

Don’t be scared by the list of ingredients in this dish.  It looks like a lot, but it’s really just a spice dump and I promise that the combination will leave you licking your fork, fingers, and just maybe even your plate.  I used leftover pre-cooked lamb, but I’m guessing raw lamb stew meat would work just as well.

Pull out your slow cooker and add everything into the pot with the exception of the yogurt.

Now turn on your pot, setting it on low for the next 4-6 hours or high for the next 3-5.  Walk away and don’t look back until it’s time for dinner.  Catch up on the latest episode of Glee, fold some laundry, dance around your family room singing a”I’m Walking on Sunshine”.  Do anything but worry about dinner.

When the magic hour arrives, cook up a batch of rice and while that’s in progress, you’ll simply open up your slow cooker, grab your yogurt and stir it into the curry.

Who knew dinner could be so easy.  Sugar high what?

Ingredients:
