Being a mom to three boys, life can be a bit crazy at times; especially once the school year kicks into high gear. In addition to the daily fill of mandatory education, we’re running to swimming, first communion classes, Y-Guides and soccer. Some days the window for dinner can be pretty small. Despite all this, moms need to work with the time they’re given and if you ask any of us what we prefer, we’ll all tell you that we’d much rather provide our family with a healthy home cooked meal if given the opportunity.
With that being said, in the spirit of back to school, I thought it might be fun to rummage back into the archives and dig up some of the quick and simple meals that were posted over the past year and a half. Some are 30 minute or less and some are slow cooker and forget it meals. All promise to be low on work and high on satisfaction so you can get in and out of the kitchen quickly and still put a family pleasing meal on the table that will have your hungry tribe clammering for seconds.
This is one of my all time favorite 30 minute meals. In just a few simple steps (and I do mean simple) you can have a scrumptious dish on the table your family is guaranteed to gobble up.
Weeknight Chicken and Broccoli
This dish can be made with kitchen staples and comes together really quickly for a favorite weeknight go-to choice.
Love me some beer cheese soup. There’s nothing more satisfying than a spooning up a hot and hearty elixir on a cool fall or winter evening. I could seriously live off of soup if the rest of my family was on board. Unfortunately they’re still a bit too attached to their forks for their own good.
Pizza. Enough said. This baby is Awe-Some. One of the best pies I’ve ever made. When you’re short on time, buy a pre-made crust and pre-cooked chicken to speed up the cooking-to-eating time ratio.
Turkey Apple Bacon Grilled Cheese
Who doesn’t love a tasty sandwich? They’re fast, versatile and family friendly. Add a scrape of butter to the top and grill it up for a deli quality dish.
Greek Inspired Slow Cooker Chicken
I would be completely remiss if I didn’t throw in a couple slow cooker recipes. After all, the slow cooker is the queen of busy weeknight meals. Simply throw it in, forget it, and come back to a mouthwatering meal. What could be better than that? This chicken recipe, that’s what.
Curried Chicken Cacciatore – Slow cooker style
Another fan-tabulous slow cooker recipe. I need to mention the other bonus to this dish – leftovers! Which brings me to my final recipe….
Because why eat the same meal two days in a row when you can change it up and make a completely different dish in no time flat? Whip this beautiful pasta up with your leftover chicken cacciatore and prepare to lick the plate clean.
Hopefully I’ve provided a bit of inspiration as we start up another busy fall season to get yourself back into the kitchen and cooking up family pleasing meals. It doesn’t have to be complicated to be fantastic!
