Family Friendly Fridays: Honey Sweet Corn Bread

New Year Eve.  Can you believe it?  I feel like the holidays blew by in a flash this year!  It’s been a whirlwind of fun, but I’ll admit that I’m ready to get back to a bit of normalcy.  With my blogoversary coming up in just a little over a month, I’ve been thinking about different ways to spruce up this little corner of the internet over the upcoming year and I’ve come up with some fun ideas that should hopefully be a hit with everyone.  Stay tuned for more information in the upcoming weeks!

Moving on to the star of the show; honey sweet corn bread.  Get ready.  I’ve been working on perfecting this bread for awhile now and I guarantee you won’t be disappointed in the results.  It’s moist, it’s flavorful, and it’s a perfect accompaniment to your cooked up batch of slow cooker chili.  To whip up a batch of this tasty quick bread treat, you’ll need to head over to your pantry and scrounge up the following cast of characters:

Family Friendly Fridays: Amaretto Banana Bread

As a lover of all things food, I make and bake a lot of different dishes.  Most of them are tasty, some just plain aren’t, and some; well some are so good, that they remind you exactly why you enjoy cooking, baking and eating the way you do.  This is one of those recipes.

I love banana bread as much as the next gal, but it seems that it’s usually at its best in the first hour you take it out of the oven and then it tends to go down hill from there.  One of the biggest factors for most of us is the level of moistness that a banana bread has.  Because as we all know, dry sweet bread is not tasty sweet bread.

Cooks Illustrated had a feature this month talking about how to make the perfect banana bread.  I always have a large stash of ripe bananas frozen in my freezer, so between my inspiration attained from CI and my overflowing frozen fruit stash, I became inspired to attempt a moist and delicious banana creation of my own.

Enter in Amaretto Banana bread.  My initial thought at obtaining moistness in a bread was, why not add a glaze to it?  So that’s what I did and, let me tell you, the results were amazing.  I don’t think I’ve ever had a banana bread as delicious as this one.  Scott and I would eat a piece and then sneak back into the kitchen when the other wasn’t looking and steal another piece.  It was just that good.

And in case you’re wondering why I placed a bread with alcohol into family friendly friday, I can tell you that I boiled the amaretto first so that the alcohol would be removed and my children could enjoy this bread guilt free.  And enjoy they most definitely did.

Family Friendly Fridays: Homemade Naan Bread

Would you believe it’s already time for another addition of Family Friendly Friday?  As you probably already know, today we are going to put together the much anticipated finale to our delicious Indian dinner; the naan bread. Yum!

I know, I know, I probably should have braved the roti and believe me, I wanted to.  But as is typical for me, I was lazy and didn’t have the proper flour to do it nor did I have the fancy equipment that Ekata used to puff it up and make it all delicious looking, so in the end I settled for a homemade naan with what I had available in my pantry.

Mango Cranberry Muffins

Today I decided to go back in time a bit to a recipe I’ve been holding on to from our springtime camping trip to Stone Mountain, NC.

I came up with this recipe as a way to use up some frozen mango and frozen sugared cranberries I had in the freezer.  The result was magical.

I loved the combination of fruit; sweet meets tart is always a palate pleaser for me.  The colors weren’t too shabby either.  And, of course, what’s a muffin without a streusel topping?  These little beauties were a hit with the entire family and were gobbled up quicker than you could say “Mango Cranberry Muffin please!”  So what are we waiting for?  Here’s how you put them together.

Foccacia

I can’t believe it’s Thursday already!  This week feels like it’s flown by a bit fast.  I’m guessing it’s because I have the two older boys in Vacation Bible School.  Which means I’m down to one child in the mornings.  Which means (do I really have to spell it out?) that I’m down to ONE child for three hours each morning!  Sheer heaven I tell ya.  And I love that this wonderful week falls smack dab in the middle of the summer break.  Just when you think you can’t take one more day of fighting, mess, and “Mom, I’m booorrreeeddd”, WHAM!, like a fly swatter to the head, there it is, a three hour break.

And, what may you ask, have I done with this precious 15 hours of bliss so far?  Have I gotten myself a hair cut?  I know, I’ve had coffee with the girls.  No wait, I’ve gone shopping; I must have done a little of that, right?  Ummm…. would you believe I’ve done none of that?  Although I will in fairness say, that I MUST get to the grocery store before the little rugrats are back 24/7, so tomorrow come hell or high water I’ll be there.  No no my friends.  What I actually do with all that free time is head back to the house and blog.  And blog.  And blog some more. Sad I know, but what can I tell you, I love my blog.

Bloggers Anonymous anyone?

If I’m going to spend all this time blogging for you, I might as well throw a recipe out there, right?  Today’s flavor of the moment is one of my kid’s favorites for the sole purpose that it’s bread.  Every night when I’m making dinner they ask if we’re having bread.  They can’t get enough of the stuff and, to be honest, either can I.  And no, we don’t have it every night.  Bread baking takes some serious preparation which is definitely a good thing.  I don’t know about you, but there are only so many days in the week when I can actually think of dinner time more than an hour before it’s supposed to be served.

This bread was actually prepared for our supper club this past weekend.  I made two loaves because I knew the second my kids saw what I was making they would beg me into submission asking for a slice.  And for good reason.  I tell ya, this bread was GOOD.  Just like the leading lady in a cheesy teenage chick flick, it had the beauty and the brains.
