Ginger Scallion Soup

Bacon, Apple & Gouda Stuffed Pork Chops and a Free Jug of Better than Bouillon

Mention the word “Stuffed” to me in reference to food and my eyes will almost always light up with anticipation.  I can see you nodding your head in agreement with me. And why wouldn’t you?

While food in itself is delightful, food stuffed with more food is usually double the pleasure.  It only makes sense when you stop to think about it.  Seriously, why eat a lonely graham cracker when you can have one with chocolate and marshmallow in the middle?   Peppers and mushrooms are perfectly capable of standing on their own two feet, but drop in a little cheese and crumbled meat if you really want to see them dance.   And of course there’s pasta shells.  They’re just begging to be stuffed with any and all form of culinary delight.

Squash, Spinach and Sausage Stuffed Shells

Sweaters; leaves of gold, red and orange; pungently sweet spices; the return of my skinny jeans (ok, maybe not this year but dang it, every year thereafter); Halloween; Thanksgiving.

These are just a few of the reasons I relish the return of the fall season.    Even hot weather fans can’t deny the magic in that first cool day when the air conditioners abruptly turn off and the windows subsequently fly open in order to allow the crisp autumn breeze to gratefully flow in.

Grilled Sausage Pepper and Onion Flatbread

Grilling season is here once more and having grown up a diehard cheesehead myself, I know that the flame kissed meal is an essential part of summer time eating.   Who doesn’t love a bratwurst hot off the coals?  Combine it with a melted topping of Wisconsin cheese and you’ve got yourself one heck of a tasty treat.

If you’ve never thought of grilling up a pizza over the coals, now’s the time to try it.  Zip up your cooker as hot as it will go and you’ll discover a magic formula for crispy, delectable pizza crust that will rival any thin crust joint you’ve frequented in the past.   If you’re not in a grilling mood or are looking for a quicker option, this pizza can be made in the oven as well.  Simply grab a store bought crust, add your toppings and cook until the cheese is melted and golden bubbly brown.

Thai Chicken Salad with Peanut Dressing

With Memorial Day officially in the tail lights, it’s time to begin ushering in the warm weather season. The boys have one week of school left and then we  turn off the alarm clocks and turn on the lazy days of summer. Well… maybe not so lazy if you’re in this family. We’re taking a week to recover and then it’s full steam ahead with camps, travels and summer school programs. This year we’ll be coasting everywhere from Delaware to Hilton Head to Minneapolis and back again. I’m actually going to be attempting my first overnight drive cross country with all three boys and no husband in tow for moral support (and associated heavy lifting). Wish me lots and lots of luck; I’ll be fortunate to make it out in one piece.

Shrimp-tastic Quesadillas

I must admit, since creating the chicken wraps from the Sargento recipe site a couple weeks back, I’ve found myself surfing back there on occasion, looking for more quick and tasty dinner time ideas.   Last night the return trip arose from a desire to use up some leftover cooked shrimp from  a low country boil eaten the night before.  I popped over to take a gander and right on the front page, staring straight at me as if to say, “eat me you sassy, hungry home cook you”, was a simple and straightforward recipe for chipotle shrimp quesadillas.
