Lemon Almond Cookies

A simple, tasty cookie that's perfect for spring.
Recipe type: Dessert
Serves: 2-3 Dozen
  • 11/2 Sticks Softened Unsalted Butter
  • 11/2 Cups Sugar
  • 2 Eggs
  • 11/2 tsp Almond Extract
  • 1 Medium Size Lemon's worth Zest and Juice
  • 1 tsp Baking Soda
  • 1 tsp Salt
  • 11/2 Cups Flour
  • ¾ Cup Almond Flour*
  • Slivered Almonds (Optional)
  1. Cream together the softened butter and sugar.
  2. Add in the eggs, almond extract, lemon zest and juice. Mix well.
  3. Add the dry ingredients: baking soda, salt, flour and almond flour. Mix until combined.
  4. Spoon out tablespoon sized balls of dough onto a greased cookie sheet.
  5. If desired, top each ball of dough with a couple slivered almonds.
  6. Place in a 350 degree oven for 8-10 minutes or until you begin to see light browning around the edges of the cookies.
  7. Let cool completely and enjoy.
*Regular flour can be subbed for almond flour.
