Galaktoboureko: A Classic Greek Dessert with an Autumn Flavored Twist

Tis the season for dessert and trust me, I promise not to disappoint.  This past weekend the hubby and I trekked off to our monthly supper club gathering where the theme centered around the Mediterranean flavors of Greece.  I was assigned the sweet ending for my contribution to the meal.

Now everybody knows and has had baklava at some point in their lives.  After all, it’s the most famous finisher known around the world in Greek cuisine.  I debated putting a batch of it together, but then I thought, why be predictable?  Life, and my upcoming Greek meal for that matter, deserves a little shake up to keep things interesting.

Caramel Apple Frozen Yogurt and a Lesson in the Art of Apple Growing from Tree Top

A few months back I had the privilege of flying west to the great state of Washington and spending a couple whirlwind days with the amazing people at Tree Top apple juice.    I have to say, I always enjoy these adventures when they’re presented to me.  The generosity of the people sponsoring the event never fails to astound and the education you come away with is something you could only garner through viewing the process straight from the source.  This trip was certainly no exception.

Caramel Apple Strudel

Round two of culinary boot camp at the local cooking school began this past weekend.  The first five weeks focused on learning proper technique in the kitchen and now the subsequent four will be putting said techniques to good use.  We intend to do just that whilst eating our way across the country in true Johnson and Wales fashion.  This past Saturday focused on the foods of New England.  Think seafood, seafood and more seafood.  We steamed up a clam bake, boiled a live lobster and created the ultimate crock of baked beans.  We pressure cooked a fabulous boiled dinner of corned beef with cabbage and, of course, we made chowder.  Four kinds of chowder.  There was the classic New England, the Manhattan tomato based “chowda”, Maine chowder which incorporates a splash or two of half and half and Hatteras (not New England but done for comparison none the less) which is simply broth based – no cream or tomatoes….

Carrot Oatmeal Raisin Cupcakes

These little confections could easily go by an alternate name of “everything but the kitchen sink” cupcakes.   Charged with baking a sweet treat for Drew’s preschool, I stepped into my kitchen Sunday afternoon with an empty pantry, an absent husband and a sleeping toddler.  There would be no trip to the grocery store for me.  It was time to get creative and I was up for the challenge.

Do you ever envision what your retirement will be like?  Maybe you imagine yourself living on a beach somewhere in a small cabana, with your feet nestled in the warm soft sand while you sip on a cool refreshing drink.  Or perhaps your idea of retirement is retreating up to the snowy mountains in a quaint chalet with your better half, a space big enough for the grand kids to come visit but small enough to  live in without getting lost (and if you’re my husband, a back door walkout to the ski slopes wouldn’t hurt either).
