Quickie Cajun Fish

If you’re looking for a quick, healthy mid week meal that everyone will eat, this is it!  My boys devour this fish and Nick has even proclaimed it “his favorite dinner meal” that I make. It doesn’t get much easier than this recipe.  Here’s what you’ll need:

Ingredients Needed:

1 Pound of white fish
2 Tbsp Olive Oil
2 tsp of Garlic Salt
2 tsp of Thyme
2 tsp of Paprika
1/2 tsp of Cayenne Pepper*
1/2 tsp of pepper sauce*
1/4 tsp pepper

*You can use less of the pepper and sauce to “mild” it up, but I’ll say that even full octane, it’s not that spicy.  If my kids will eat it, I know it’s got to be pretty mild because they’re complete and total “spiceaphobes”.

Take all the above ingredients and dump them into a gallon sized ziploc bag.  Lock the bag closed and squish the fish around the bag to coat it completely.  At this point you can put it in the fridge to marinade for a few hours.  Or, if you’re like me and you’ve started making dinner a half hour before it needs to be on the table, just place it straight on your baking sheet and cook it up in a preheated oven set to 400 degrees.  It will still taste delicious; I promise!  Here’s what you’ll have before you cook it:

It looks tasty already!  Pop it in the oven for about 10 minutes.  Pull it out and enjoy!  Easy Peasy!  I served it up with a lemon wedge, a salad, and some creamy lemony brown rice.  Mmmm.  Is it dinner time yet?
