Last night I went out to dinner with about 20 other bloggers from around the Charlotte area for our first ever local blogger’s meet up. What a fun and informative time! I had no idea there were so many others doing what I did so close to home. We had a wide group of ages, experience levels and niches, along with both men and women. I thoroughly enjoyed hearing about everyone’s blogs and learning several new tips and tricks I hadn’t known before.
There is just something so “real” about meeting the person behind the blog. If you don’t already have a local blogging meetup in your area, I recommend you get one started. It’s a fabulous opportunity to network and meet some other men and women on a more personal level that share your same passion for blogging!
Now that I have that out of my system, let’s move on to Family Friendly Friday and the recipe of the day. Just a reminder to add your family friendly link to the bottom of post. You can add any type of post from a recipe to a craft to a vacation. The only requirement is that it be kid friendly.
Today I’m going to post up a recipe for oven baked fish sticks. Because, honestly, what kid doesn’t like a good ‘ol stick of breaded fish on their plate? Nicholas, my oldest, was the by far the biggest eater of these. He had two helpings for dinner, ate the leftovers for lunch and then asked if I’d make them again for dinner the next night. If that’s not a family friendly dinner, I’m not sure what is! So let’s get started!
Ingredients Needed:
1 Egg
1 Pd of Fish (I used Halibut)
1 Tbsp of Old Bay
1/2 Cup of Flour
1 Cup of Corn Chips, Ground
1/2 Cup of Panko
1 Tbsp of Parmesan Cheese
1/4 tsp of Pepper
In a bag or bowl, add in your old bay and 3 or 4 good shakes of pepper. Drop your fish in and coat them completely.
Grab three separate bowls. In the first scramble up your egg, in the second add your flour, and to the third add the panko, corn chips, and parmesan cheese.
Grab your bowl of fish, and one piece at a time, and dip them in the flour, then the egg, and finally the panko mixture. Lay them out on a cookie sheet lined with aluminum foil (it’s all about the easy clean up, right?)
Cook up the sticks in your oven, set to 350 degrees for about 20 to 25 minutes or until the fish is cooked through.
And now you’re ready to serve up the best homemade fish stick this side of the Mississippi!

Julie we all love fish sticks here. I haven't tried to make them from scratch yet – therefore it's been at least a year since we've had them – but I'll make 'em now!
Meetup with local food bloggers sounds great. Hmmm, I'll have to organize something here in Kansas me thinks 🙂

Mmm! These look great! We love fish sticks, but I hate how fattening they are so these look like a much better option. Thanks!
These fish sticks sound sooo… good. I like the panko and parmesan in your coating. Baking it makes it even better.
Great that you got to meet the other bloggers. It must have been fun!
I used to love fish sticks!
We thought of NC/SC, but it's expensive to fly there. 🙁 Someday, I'll make it down to your area.
Yum!!! I have a package of Cod in my freezer just hanging out. I haven't known what to do with it so maybe I'll try this! Thanks for sharing!

These look delicious. I made my husband come over to look at these because I knew he would love them. He also loves your blog…especially your header. I hope you have a wonderful weekend Julie! (I wish we could meet up!)

Oh wow! I love your pictures! I love oven baked fried chicken. So much healthier than the "fried" ones and they actually taste pretty good, too! Yum!
It sounds like the meetup was wonderful. I am in Greenville, SC. Please let me know if you get together again.

My kids love fish sticks and I hate buying those processed one. I am printing this recipe out and totally trying it…yeah! You are awesome!
i didn't know you lived in charlotte–i love that city! my brother lived there for several years. 🙂
meanwhile, i grew up eating those more-than-slightly disgusting frozen fish sticks…these are far, far superior. 🙂
This looks delicious. I might have to give this a try soon-like you I am not one to buy frozen fish sticks!
Best wishes,
Natasha.
I'm not aware of any blogger meetups that have taken place in Denver. I'd love for that to happen. These fish sticks looks like serious good food. Gotta love the corn chip and panko combo. Kids-schmids. I'm making these for me and the hub.
Yum, I need to make these…my kiddies would love them.
It sounds like you had a fabulous evening with fellow bloggers. Your fish sticks are really appetizing. I've been looking for an oven baked recipe and this just might be the one. I hope you are having a great day. Blessings…Mary
Mmmmm That looks pretty yummy!!
Oh that looks so yummy!!! I never thought to use fritos, that sounds great! I'm totally going to try this one!
Thanks for stopping by for the tea party! I'm loving the weekend as its a long one for Mr. Groom. Hope yours is great as well. As for the wedding planning, its pretty much at a standstill until I'm back from South Korea.
thanks for the kind comments hope to meet you all down there one day you have much better places to eat than here, or maybe we can have one half way in childress!
Rebecca
Julie, this look absolutely scrumptious! The only problem I would have is using Frito corn chips because I am absolutely addicted to them. I can stay away from chips and pretzels, etc. but Frito's? I'd end up eating the whole bag before I made the fish sticks, lol!
Yum! I love the idea of using Fritos. I'm going to give these a try.
Plan B
Those look good!
Your meet-up sounds like a lot of fun! I love getting to meet other bloggers.
Can't wait to try this recipe! My husband is a pilot and brings back fresh halibut from Anchorage all the time!
Thanks for sharing!

Kids would love these…and I would too! I've never made my own fish sticks before, but it seems so simple and worthwhile. Thanks for sharing 🙂

Jami
Your fish sticks look like crunch deliciousness! I bet my kids would love them with the corn chips added in like that:)

Seemed like a fun get-together!
I like "corn chips" you added. It's so unique! Although I'm not a kid anymore, I would totally eat them all and ask for more because I love fish and anything cruncy!
How fun that you and your bloggy buddies got together! Great idea… and I am totally digging these fish sticks!
