Cheesy Cauliflower Puree

I know I promised an Indian feast for the next few days, but as luck would have it, I left for vacation and forgot to grab the pictures I needed to make the posts.  Have no fear, they’re safely tucked away on my server back home, but alas, it does me no good right now.  So, I will need to improvise a bit and go with a few recipes I do happen to have on hand.  I promise the Indian food will be back in all it’s glory next week.

I asked Mr. Cheesy Cauliflower Puree to step in at the last minute and he gladly accepted the task.  I’ve been wanting to try and whip a batch of this yumminess up for some time now.  Ever since I saw a plate of it displayed over at a fellow Daring Cooks site, where it instantly made my mouth water.

There’s really not much to it, so let’s put it out there and have ourselves a heaping pile of puree.

Ingredients Needed:

1 Head of Cauliflower, Cut up
2 Tbsp of Olive Oil
1/2 Cup of Milk
2 Tbsp of Butter
1/2 Cup of Shredded Cheddar
Salt and Pepper to Taste

First up, grab your baking pan and spread your cauliflower pieces over it.  Brush the cauliflower with olive oil and sprinkle liberally with salt and pepper.

Throw your cauliflower in the oven set to 350 degrees and roast it for 25 minutes or until it starts to turn golden brown on the edges.

Honestly, I could eat the entire pan of it just as it is, oh how I love roasted cauliflower! But in the spirit of trying something new and different, we’ll push forward.   It’ll be worth it, I promise!

Ok, grab a large sauce pan and add your cauliflower to it along with your milk and butter.  Turn the heat on medium low and mash up that cauliflower good.  Here’s mine before the mashing:

I like my mashed cauliflower a little smoother than that, so I followed my mashed with my emulsifier to get a creamier texture.  Here was the result:

Time to finish this side dish off with a little cheese.  Throw it in and let it melt completely.  Add additional salt and pepper as needed.<

And as easy as that, Mr. Cheesy Cauliflower Puree is ready to step in and compliment any main course you throw it’s way!
