Monday’s upon us again and it’s time to get back to the beloved daily grindstone. As for myself, depending on the time of day you’re reading this I’m either having a yummy mid morning breakfast with another close blogger friend of mine; Sommer from A Spicy Perspective, I’m on the road heading back to Charlotte and enjoying a quiet drive with me, myself, and I, or I’m already in Charlotte dealing with my own personal “return to the real world” grindstone of laundry and a house that’s been inhabited by my husband and three wild animals boys alone in the house all weekend. God bless him.
Anyway you slice it, it’s been a great weekend away with my blogging girlfriends, and I’m ready to tackle another week of chaos and fun. So what do you say? How about a light and tasty salad to kick off this final week of September? And, yes, you will most definitely lick the bowl clean and come back for seconds on this one. It’s just that good. I made it for our supper club a few weeks back and ended up eating not one, not two, but three bowls of it the next day for lunch (I may be revealing just a bit too much about my eating habits by telling you that). To top it off, it’s super easy make, and I really do mean that.
Before we head to the kitchen, I just want to remind my local Charlotte readers one more time that Disney on Ice featuring Toy Story 3 is quickly approaching! Now, let’s head to the kitchen and whip up a lick the bowl clean salad!
Ingredients Needed:
1 Cup of Sour Cream
1/2 Jalapeno, Chopped
2 Tbsp Salsa
1/2 Lime, Juiced
1 Clove of Garlic
1 Tbsp of Fresh Cilantro
1/4 tsp of Onion Powder
1/2 tsp Chili Powder
2 Tbsp of Vegetable Stock
1 Tbsp of Mayo
Salt and Pepper to Taste
Alright, are you ready for this? Mix it all together, throw it in the fridge for an hour or more to meld the flavors and you’re done! If that’s not easy, then I don’t know what is. And believe me, the taste will make people think you slaved away in your kitchen for hours.
Of course, I can’t leave you without telling you how I put together my salad. For a Mommie Cooks Southwest salad, you’ll need to grab your….
- Lettuce mix
- Some fresh cooked corn, shucked off the cob
- Fresh diced tomatoes
- A can of rinsed black beans
- Chopped green onion
- Chopped up Avocado
- A couple handfuls of roughly crushed tortilla chips and, of course
- A big ol’ handful of shredded cheese
Throw it all in your salad bowl, grab your dressing and add a few large spoonfuls on top.
Now, my friends, prepare to moan and groan your way through the best darn southwest salad this side of the Mississippi.
Lick the Bowl Clean Southwest Salad Dressing
Ingredients:

Mmm– looks so good. I would seriously make this dressing right now if I had all the ingredients on hand (lacking the lime and cilantro, and I’ve been out all day in the rain and already went shopping). Very good! Just made this, but substituted Greek yogurt for the sour cream. Also, didn’t have vegetable stock, so I left it out. This will be a new regular!
