Nacho Mama’s Cheese Nachos

First up, let me just say that these nachos were Da Bomb.  My family loves a loaded up chip.  Anytime I’m looking for a quick, fun meal to fill them up, I think about whipping up a batch of these little beauties. And the best part about nachos for me is that you can make them to suit your mood as well as your pantry and in turn, pretty much be guaranteed that they will taste amazing with just about anything you throw on top of them.

Up until now, I had done a simple and easy preparation of just adding shredded cheese melted with an array of toppings.  This time around though, I thought I’d shake it up a bit.  I’d been wanting to try and make a queso cheese for some time that didn’t incorporate the use of processed cheese food (nothing against Velveeta, but what the heck is “cheese food” anyway?).   So I pulled from every corner of my fridge and pantry and sat back and smiled at my creation because it was good.  Real good.  This cheese added a whole new dimension to the dish.  It was creamy, cheesy, tomatoey (is that a even a word?), and just downright finger lickin, tongue clickin’, rib stickin’ good.

Are you ready for this?

Ingredients Needed:

2 Tbsp of  Butter
3 Tbsp of  Flour
1 Cup of Milk
11/2 Cups of Shredded Cheese (I used Pepper Jack)
1 4 Oz. Can of Green Chiles
1/2 tsp of Chili Powder
1/2 tsp of Cumin
1 Small Bunch of Cilantro
1/2 Cup of Salsa
1 Bag of Tortilla Chips
Assorted Toppings*

*I used chicken, tomatoes, green onions, black beans, and avocado

To get started, grab a pan and melt up your butter.  Add in the flour and create a roux.  Then add in your milk, put the heat on medium and let the mixture thicken.

Turn the heat down to low and add in the cheese.

Once it’s melted add in your green chiles, chili powder, cumin, and cilantro.

Now add in the salsa.

And you’re ready to go!

Lay your chips in an oven proof bowl and pour the cheese over the top.

Now add on your desired toppings.

Throw them in the oven for about 10 minutes at 350 degrees.

Pull em out, grab yourself a plate and dig in.
