Turkey Goulash

I don’t know about you, but for me the best part about the days following Thanksgiving are all the yummy leftovers.  I was lucky enough to not have to cook the meal this year (my SIL took on the job and put together an amazing spread!) but I did still manage to snag a bag of leftover turkey and we’ve since been having our fill of some amazing sandwiches.

The time will most likely come, however, when you’ve had enough of turkey sandwiches. If you’ve reached that point along with me, then it’s time to check out a yummy one dish meal that I’ve cooked up for just such an occasion.

This dish makes quick work of any leftover bird you have lying around and tastes delicious to boot!  If you make it during other parts of the year when you don’t have leftover turkey available, simply substitute ground turkey in it’s place.  I actually used ground turkey in the pictures as this recipe was made before the big bird eating day.  Either works well and makes a hearty one dish meal.

Ingredients Needed:

1 Pound of Ground Turkey or 3 Cups of Leftover Turkey
3 Cloves of Garlic
1 Onion, Chopped
1 Pepper, Chopped
1 tsp of Garam Masala*
1 tsp of Paprika
1 tsp of Cumin
1 tsp of Coriander
1/2 tsp of Ginger
1/2 tsp of Curry
1 Can of Diced Tomatoes
1 Cup of Chicken or Turkey Broth
10 Oz. of Frozen Spinach or 1 Bag of Fresh
1 Cup of Sour Cream
6 Oz. of Egg Noodles, Cooked

*Can be found at an Indian/international grocery store or possibly in the international section of your grocery store.  You can also make your own through a recipe I found HERE.

If you’re using ground turkey, start out by browning it up, then adding in your garlic, onion, and pepper. Cook it for 3-4 minutes.  If you’re using leftover cooked turkey, cook up the garlic, onion, and pepper in a tablespoon of oil for 3-4 minutes on medium heat and then add in the turkey.

Next you’ll add in your spices; the garam masala, paprika, cumin, ginger, curry and coriander.  Add in your tomatoes and stir it all together.

Next up you’ll add in the stock and let it cook on medium heat for about 5 minutes.

Add in your spinach and give it a whirl or two until it heats up and wilts down into your meal.

Now stir in your cup of sour cream.

The final step is to add in your noodles.

I tell ya, Thanksgiving leftovers never had it so good.

    Looks tasty.
    I made a good leftover casserole too. It was pretty good. It had turkey, cream of mushroom, broccoli, celery, and boxed stuffing. I ended up freezing most of it.

    Oh wow that looks really good. We don’t have any leftovers because of traveling for Thanksgiving. But I love that this can be made all year round with the ground turkey. I’ll have to give it a try for sure.

    My mother is always making some kind of goulash recipe especially right after the holidays. Sometimes it’s good and sometimes it’s not so good, but I still love her. I’ll have to pass this recipe along to her because it sounds really good.

    Ooooh! I make a delicious beef goulash all the time but never have tried it with turkey! We didn’t get any turkey leftovers since I don’t make the turkey at my family Thanksgivings (my mother does), but I would still love to try this!
