I don’t know about you, but I’m in the mood for a bowl of soup. I love soup. In all forms and in all flavors. I love how it can be what you need it to be at any given moment. Hearty when you need a big meal, comforting when you’re feeling under the weather, light when you just need a little something to curb your appetite, and healthy when you want to feel good about what you’re eating. And let’s be honest here, between the turkey and the desserts and the leftover Halloween candy (yes, my husband and I are still wading through our kids stash), we could all use a little healthy, right?
Minestrone is one such soup and it just happens to be an absolute favorite of mine for the following reasons:
A. It’s really healthy.
B. It’s super easy to make.
C. It’s the type soup where you can pretty much throw anything in the pot and it still tastes awesome.
D. I swear it can cure any illness you may be suffering from. One bowl and I promise you’ll feel better than you did before you ate it.
E. Did I mention it’s easy to make?
If I haven’t convinced you yet, take a gander at all the goodness in the bowl and see if you can resist. I even threw a splash of Indian flavor in there to warm it up and give it a little extra yummy.
Ingredients Needed:
3 Carrots, Diced
2 Zucchini, Cut up
1 Onion, Diced
3 Celery, Chopped
1 Handful of Green Beans
3 Cloves of Garlic, Minced
1 10 Oz. Can of Garbanzo Beans
1 Pd of Cooked Lentils
1 28 Oz. Can of Tomatoes
4 Cups of Veggie Broth
1 tsp of Curry
1/2 tsp of Cumin
1/2 tsp of Garam Masala
1/2 tsp of Salt
1/4 tsp of Pepper
6 Oz. of Cooked Noodles
First up, your veggie and bean selection can be flexible. If you’ve got it, add it! You can’t go wrong with veggies and beans.
Alright, start out by adding the veggies into your slow cooker.
Next you’ll add in your garlic, beans, lentils and tomatoes.
Finally add in the broth, curry, cumin, garam masala, salt and pepper. Stir it all together and cook it on high for 3-4 hours or low for 4-6. Add your noodles in just before serving.
Time to eat.
I’m feeling healthier (and dare I say lighter?) just looking at this beautiful bowl of soup.

[…] Mommiecooks’s Minestrone soup with an Indian touch […]
I love soups for the same reasons as you. Unfortunately the weather here is so warm that does not allow me to make a soup and enjoy it. So what I do is see your beautiful soup and drool.
Rich, healthy and delicious soup bowl, feels like grabbing it right away.
An excellent and super comforting bowl of soup! I love your addition of Indian flavors with the curry, cumin and garam masala!
It is all snowy today and I want to eat that soup!!!
I can’t agree with you more on soups being healthy and nourishing. I love minestrone and your version with an Indian kick sounds really good. I can do with a bowl of that now. It’s mid morning and we have reached our high today of 19 degress!

Great, easy soup! This is perfect for the chilly weather we are having and I love the garam masala. I think it is the most versatile Indian spice there is!!

The boys love soup. LOVE LOVE LOVE soup. And since moving East and being cold, they seem to ask for it more and more and more. I’m totally giving this one a go.
Oh, I have been wanting to learn to make this soup for awhile now. I love good soups and can’t seem to get enough of good recipes to fix. Thank you for sharing. It looks amazing.
This looks SO good today…. after our first bit of snow. And oh gracious, yes do I ever need to watch what I eat. My jeans have either shrunk or I hit too many desserts recently. 🙂 Have a great night Friend!
Yummy, I love these photos Julie – awesome 🙂 Its getting ready for a fabulous summer ‘down under’ but gotta say that soup looks like its actually got my name on it 🙂
You would definitely get a couple servings of veggies with this so it has to be chalked up to the healthy category 🙂 Minestrone soup is one of my favorites. This one looks great. Thanks for sharing!
THAT…is lovely soup! I don’t use my slow-cooker enough. It usually only makes an appearance when I need something to stay warm for a party. I need to pull that puppy OUT!

Hi Julie. I’m a soup girl too. It has done wonders for my health during the colder months, and it tastes so heavenly (especially with a loaf of fresh bread!)
