As I sit here this very moment, Charlotte is covered in 7 inches of snow and a quarter inch of ice. We’re on day three of no school tomorrow morning and our power is officially out. I’m typing under the light of four candles. Just me and my blog post (at least until the computer battery dies, then it’s just me). I feel like the mailman; “rain, snow, sleet, hail, nothing can stop the US mail.” But seriously, when it’s 8 o’clock at night and there’s no tv, no heat, and no lights, pretty much the only thing left to do is blog, right?
So in the spirit of perseverance, we’re going to cook up a quick and tasty fish dish using one of my favorite nuts; macadamia. This meal cooks up fast, tastes great, and is a tried and true recipe whether you’re serving it to a hungry crowd or to your family. Here’s what you’ll need to whip a batch up:
Ingredients Needed:
1 Pound of White Fish (tilapia and catfish work well)
2 Tbsp of Oil
1 Cup of Macadamia Nuts, Chopped
½ Cup of Flour
2 Eggs
½ Cup of Panko
1 tsp of Lemon Pepper
Grab three bowls and add your eggs, whisked up to one, your flour in the second, and the panko, macadamia nuts, and lemon pepper in the third.
Dip your fish first into the flour, then the egg, and finally the macadamia mixture. Heat up the oil in a large frying pan on high heat. When the oil is good and hot, add your fish into the pan.
Cook it up for about 3 minutes on each side, until cooked through, and serve. If needed, switch out your oil about halfway through pan frying.
Grab a slice of lemon, a slab of fish and as quick as that, you’re ready to sit down to a delicious and easy dinner.
If you don’t hear from me by Friday, I’m probably on a plane headed back to where it’s warm and electricity is bountiful!

This is a great recipe. I have not fried fish in a very long time. I usually broil it or bake because it is supposed to be better for you. Is there a way to fry fish and still retain the health value?
I like that this is so quick and easy, and always looking for a new tilapia dish! Bonus that you can make it without electricity. (I love my gas range!)
