Saucy Mama Breakfast Burritos + a Giveaway

I can never resist the temptation to join in a good ol’ recipe contest.  Saucy Mama recently threw down the gauntlet to me and a handful other talented food bloggers to see who could dream up the best five ingredient recipe using select Saucy Mama condiments.  With prizes and bragging rights on the line, I just couldn’t let the opportunity to throw my hat in the ring pass me by.

Let me just say, it is hard to come up with a recipe that only uses five ingredients.  I’m the kind of cook that likes to add a dab of this and a dollop of that until I get things just right.  Some of my creations are downright embarrassing there are so many additions!  But I wasn’t going to let that deter me.  I’d been wanting to put together a breakfast burrito for sometime now, and it struck me.  Why not add a bit of the southwest dressing to my eggs and see what happens?  The result is a simple and satisfying breakfast burrito that whips up in no time flat but tastes like you worked all morning putting it together.  Throw a little cheese, bacon, and cilantro into the mixture and you’ll be licking your lips and heading back for another round.

To make your own saucy mama burrito, you’ll first cook up two slices of bacon.  Love me some bacon.

When it’s cooked up good crispy like, remove it from the pan and chop it up.  Reserve the bacon grease.  In a separate bowl, whisk together a few eggs, a couple spoonfuls of dressing, a little fresh cilantro and a shake or two of salt and pepper.

Now add in that beautiful bacon and stir it into the eggs.

Put your pan with the bacon grease on medium heat and scramble up the tortilla filling.  Hola Guapa.

Now, grab up a handful of tortillas and line them down the center with the egg mixture.  Add in a little Mexican cheese for good measure.

Place the tortilla in a toaster oven for a minute or two to melt that cheese and get your burrito nice and toasty warm.

Roll it up and serve with whatever condiments your heart (and appetite) desire.  I added some tomatoes, black beans, salsa, green onions, and sour cream.

Not bad for 5 ingredients if I do say so myself.

Saucy Mama's Breakfast Burrito

Yield: 4 Breakfast Burritos

Total Time: 30 min

Ingredients:

2 Slices Bacon
4 Large Eggs
8 tsp Saucy Mama's Southwestern Dressing (about 2 tsp per egg)
1 Tbsp Fresh Cilantro, Chopped
Salt and Pepper, to Taste
1/3 Cup Pepper Jack Cheese, Shredded
4 Flour Tortillas

Directions:

Cook up the bacon on medium high heat.

Remove bacon from pan, reserving 1 tsp of grease in pan, and chop up. Set aside.

Whisk together the eggs, dressing cilantro, and a couple shakes of salt and pepper.

Cook eggs in same pan used for bacon over medium heat.

Place one quarter of cooked egg mixture down the middle of each tortilla.

Add one quarter of the cheese over the top of the eggs and place in a toaster oven on medium heat until cheese is just melted.

Roll up and enjoy with desired condiments.

Additional topping suggestions include but are not limited to: black beans, green onions, tomatoes, sour cream, salsa, and guacamole.

    Yumm!! I love breakfast burritos – brings back fond memories of breakfast growing up; my mom made those for us fairly frequently. Always topped with a slice of Kraft cheese and finished in the oven til the cheese was melty and the tortilla was crisp… mmm.. 🙂

    That looks so good! Breakfast is the hardest meal for my toddler, the only thing he will eat is dry cereal, oatmeal and waffles. We will have to try this today, and if he doesn’t like it…well I guess that means more for me lol.

    Breakfast burritos are my favorite morning treat. I like to run the tortilla quickly underwater (both sides) before warming in the microwave because then it is very pliable and easy to roll. It makes it easier for the kids to eat/grab too. I’ll give the sauce a try and I’m excited about the bacon addition idea. Yum.

    I love your blue plate! I’ve been eyeing some turqouise bowls from a pottery event that I went to, but haven’t pursued them… but now that I see yours, I’m inspired again!

    As for the burrito, I don’t care much for eggs BUT with the addition of that sauce? They looks so much more flavorful and …southwesternish. 🙂 Yum!

    My 13 year-old son is the undisputed KING of the breakfast burrito in our house. I will definitely be sharing this recipe with him! We go through a good dozen eggs, though, feeding all 9 of us! LOL

    This breakfast burrito would have been perfect for Mother’s Day, so simple even my husband could make it. It just wouldn’t have looked as nice as yours ha ha.
