Ask me what my favorite type of meat is. It’s ok, go ahead. That’s right, pork. Be it chops, ribs, bacon (oh lordy how I love bacon), or ham, if pig is being served at the table I’m all in. A few weeks back, The Motherhood asked me join them on a project in conjunction with Costco and The National Pork Board to share my love of the other white meat and help celebrate national pork month. How could I possibly say no?
The task at hand is to create a recipe for a party worthy rack of pork. With the big “C” holiday looming just around the corner, I’m thinking I couldn’t have been given a more fitting challenge. Hang on to your hats because I’m going all out with this one. I’m thinking a bit of a brine followed by a high temp sear, a finish in the oven, and a healthy ladle of pan gravy to top it all off. Have I got you hungry yet? A good smoky pulled pork is probably one of my most favorite foods on earth! I feel lucky to have a husband that totally rocks the smoker!
I linked up a recipe for Dallas Gas Station Pork Tacos, that came my way as a result of The Homesick Texan Cookbook. The tacos are out-of-this-world. The marinated pork reminds me of the Carne Adobada that we get from our favorite little hole-in-the-wall taco joint.

My husband is not a pork fan. Weird. Pork was the last meat I gave up before going vegetarian. I used to love it.
