Cooking up a Rack of Pork and a $25 Costco Linky Giveaway!

October 23, 2011 By Julie 13 Comments

Ask me what my favorite type of meat is.  It’s ok, go ahead.  That’s right, pork.  Be it chops, ribs, bacon (oh lordy how I love bacon), or ham, if pig is being served at the table I’m all in.  A few weeks back, The Motherhood asked me join them on a project in conjunction with Costco and The National Pork Board to share my love of the other white meat and help celebrate national pork month.  How could I possibly say no?

The task at hand is to create a recipe for a party worthy rack of pork.  With the big “C” holiday looming just around the corner, I’m thinking I couldn’t have been given a more fitting challenge.  Hang on to your hats because I’m going all out with this one.   I’m thinking a bit of a brine followed by a high temp sear, a finish in the oven, and a healthy ladle of pan gravy to top it all off.  Have I got you hungry yet?  If the answer is yes, then head over and join me at Costco this week where they’ll be offering up a coupon for $2.50 off a beautiful rack of pork for your upcoming party plans.

I’ll be sharing my finished inspiration at the end of the week so bring your appetite.  In the meantime, I’m linking up a few of my past pork creations to help get us into the true spirit of National Pork Month.

Pork Rouladen

Bacon Blue Cheese Quiche

You can find more of my tantalizing pork recipes by clicking on the “Pig” link above.  You can also find many more pork inspired ideas over at the Pork Board’s recipe page.

Last but not least, I’m adding a linky below for you to add your very own pork creations.  Add them at will through Friday and then I’ll open up the voting on Saturday morning.  Rally the troops in support and the winning vote getter as of Sunday evening at 8pm EST will win a $25 gift card good for anything your heart desires at Costco.  Let’s see whatcha got!

Note: I am working in conjunction with The Motherhood on behalf of The National Pork Board and Costco to help celebrate National Pork Month.  I have been compensated for my time, but as always all recipes and opinions are my own.

A good smoky pulled pork is probably one of my most favorite foods on earth! I feel lucky to have a husband that totally rocks the smoker!

I linked up a recipe for Dallas Gas Station Pork Tacos, that came my way as a result of The Homesick Texan Cookbook. The tacos are out-of-this-world. The marinated pork reminds me of the Carne Adobada that we get from our favorite little hole-in-the-wall taco joint.

We’re definitely fans of the pig around here! I added my BLT Pasta to the linky – it’s a great recipe. And this is a great giveaway!

My husband is not a pork fan. Weird. Pork was the last meat I gave up before going vegetarian. I used to love it.
