Thai Chicken Salad with Peanut Dressing

With Memorial Day officially in the tail lights, it’s time to begin ushering in the warm weather season. The boys have one week of school left and then we  turn off the alarm clocks and turn on the lazy days of summer. Well… maybe not so lazy if you’re in this family. We’re taking a week to recover and then it’s full steam ahead with camps, travels and summer school programs. This year we’ll be coasting everywhere from Delaware to Hilton Head to Minneapolis and back again. I’m actually going to be attempting my first overnight drive cross country with all three boys and no husband in tow for moral support (and associated heavy lifting). Wish me lots and lots of luck; I’ll be fortunate to make it out in one piece.

Summertime Bean and Corn Salad

It’s no secret that I love my oven.  Breads, cakes, casseroles you name it.  So many tasty foods were just meant to be placed into that insulated metal box and heated to 350 degrees.  Unfortunately, higher outside temps and oven use don’t always mix, so as springtime weather comes to a close, I find myself looking for alternative ways to create dishes that don’t involve baking.

Roasted Asparagus Salad with Lemon Mascarpone Dressing

Yes, your eyes are not fooling you.  I’ve placed another salad up on the blog today.  After receiving multiple comments about snow days and jealousy over grill worthy temps, I determined that it might be in my best interest to throw up a spring salad that doesn’t require an outdoor flame.   After all, even us Southern girls experience cold temps every now and then (as witnessed by one such nameless food blogger who was over at her vegetable garden last night covering all her planted seedlings for the “not supposed to happen in April” freeze that blanketed the city this morning).  Shh… you didn’t hear that from me.

Grilled Flank Steak Salad with Creamy Cilantro Dressing

With the official arrival of spring, the weather around our neck of the woods is slowly beginning to thaw out and warm up.  For me, one of the highlights to rising temperatures is the resurgence of the grill.  Ours had been in hibernation for the winter, but this past weekend that all changed after ardently convincing my husband it was high time we revived our outdoor cooking habits.  A promise of red meat didn’t hurt the cause either.  With a hearty agreement in hand, he and I hauled it up onto our deck and I officially lit the 2012 inaugural flame.  When dinner was served shortly there after, what lay in front of us was a simple yet flavorful grilled flank steak salad that was enjoyed by the three year old and the 30 something year old’s alike.
