Lemon Almond Cookies

I adore spring. It’s not just the warmer weather I find appealing, but the gentle rousing of nature as it begins to wake up and once again come back to life.

Here in Charlotte it begins with the Bradford Pears.  You get up one morning and walk through your neighborhood to notice that suddenly, as if on cue, the trees have the most beautiful white flowers budding from their branches. This in itself is a glorious site, but then it gets better.  A handful of days later you walk down that same street, but now the leaves are pushing their way past the flowers causing a gentle rain of petals that my kids liken to a “first of the season” snowfall….

Chocolate Cinnaberry Cookies

I recently read a report on NPR’s website claiming that the secret to winning a highly coveted Nobel Award may indeed be something as elementary as eating more chocolate.  Now Seriously.  If I had known this at a younger age, I’m certain I would be standing on that podium accepting my award right about now. I can almost imagine it as I type this;

“Fellow members of the academy, I’m honored to accept this award today for successfully breaking up a war over which child deserved procurement of the coveted red plate with the Start Wars yoda picture on top……”

Ok, so maybe not in this lifetime (that would take more chocolate than this body could handle in ten lifetimes), but if eating more of the dark brown sweet goodness means I can at the very least broker a better peace among the inhabitants within my own household then I’m all for it.  Baby steps right?

Honey Cinnamon Shortbread

Homemade Fruit Newtons

Every day I walk out my front door en-route to the bus stop to retrieve my boys.  And each time I pass by my neighbors yard, I longingly eye his fig laden fruit tree.  The juicy green and purple spheres dangle loosely from the bushes, constantly tempting me to pick just one.  Or maybe two.  When my husband informed me that we had been given the green light to pick to our hearts content, you can guess who was out there without a moments notice, bucket in one hand and clippers in the other.

Lemonade Scotchies

Lemons are a hot commodity in our house.  I buy them by the bagful at the beginning of each week and I’m lucky if they last long enough to squeeze a wedge on my Friday night fish dinner.  Alex, my middle child, especially loves the tart juicy fruit.  He’ll happily grab up a hunk of lemon and eat it like an orange, leaving only the rind in his path.  My husband enjoys them as well with the rather large exception of dessert.  Lemon bars – won’t touch ’em.  Lemon meringue pie – forget about it.  Lemon sorbet – you’d think he might make an exception, but you’d be sadly mistaken.  Personally, I think he’s nuts but the result is usually more dessert for me (and the kids of course, if and when I decide to share).

With this week’s stash of lemons, I determined that I would attempt to create some form of lemon cookie.  Alex was beyond excited with the idea of a lemony baking endeavor.  After all, he knew he would have a few squeezed lemon hunks he could compost for me after the fact.  My husband, bless his heart, didn’t share my five year old’s excitement, but I promised him some form of chocolate decadence would enter the next dessert creation, so he relented.  In the end, the beloved lemonade scotchie was born.

A perfect combination of tart lemon and sweet butterscotch, these cookies are a match made in heaven.  If you’re feeling the need to satisfy your lemon craving, the first step you’ll want to take is to cream up a little butter and sugar.  To that mixture you’ll add in a little almond and vanilla extract and an egg.

Family Friendly Fridays: Homemade Animal Crackers

If you have small children then you are probably more than intimate with the almighty animal cracker.  My pantry is never without a bag of these little beauties.  They’re perfect for pacifying a cranky hungry toddler, they travel well, and they have the same soothing effect as a cookie, only there’s the added benefit of them not being quite as big as the real thing which ultimately allows for multiple handouts.  (Aka… more handouts = greater spacing between crackers = happy child for longer period of time = happy adult for longer period of time).  Heck, I’ve even been known to indulge in a handful or two of these sweet little treats when little eyes aren’t following my every move.
