Macadamia Crusted White Fish

As I sit here this very moment, Charlotte is covered in 7 inches of snow and a quarter inch of ice.  We’re on day three of no school tomorrow morning and our power is officially out.  I’m typing under the light of four candles.  Just me and my blog post (at least until the computer battery dies, then it’s just me).  I feel like the mailman; “rain, snow, sleet, hail, nothing can stop the US mail.”  But seriously, when it’s 8 o’clock at night and there’s no tv, no heat, and no lights, pretty much the only thing left to do is blog, right?

So in the spirit of perseverance, we’re going to cook up a quick and tasty fish dish using one of my favorite nuts; macadamia.  This meal cooks up fast, tastes great, and is a tried and true recipe whether you’re serving it to a hungry crowd or to your family.  Here’s what you’ll need to whip a batch up:

Baked and Breaded Scallops

I’m stepping off the Thanksgiving train today to offer up another quick, simple, and delicious weeknight dinner option.  Because let’s face it, Thanksgiving is important, but we still have a week of meal nights in front of us that aren’t Thanksgiving and I don’t know about you, but I’m hungry!

This dish was a hit with the kids and adults alike.  I wasn’t sure how it was going to end up as I sort of “winged it” with the ingredients.   And if you ever have the privilege of watching me “wing” a meal together some night, you’ll be amazed that I run a blog at all, let alone get dinner on the table in a timely fashion.  I have got to be one of the most unorganized people out there. My brain is my roladex, my calendar, and my memory all rolled up into one.  And considering I’m nearing forty and have three small boys, that’s not saying very much.

Before I move on to the “meat” of this meal (pun most definitely intended), I also wanted to let you all know about the latest addition of the November/December issue of DIY Life magazine that is now out and available at a blog near you.  In it you’ll find over 90  pages of informative articles, gorgeous pictures, tasty recipes and more.   You will probably find a blogger or two that you recognize between the pages as well so head over and check it out by clicking on the DIY icon over on my side bar.

Seafood Enchiladas

I swear I could throw WordPress out the window this morning.  I put together a complete post last night and scheduled it to publish only to wake up this morning and find that my entire post with the exception of the recipe had disappeared.  Where it went, no one knows.  My guess is that it’s hanging out with all the lost left socks of the world.  Here goes attempt number two.  Hopefully this time it will stick a bit better.

Welcome to Wednesday!  The weekend will be here before you know it and I have to say that this week I am already counting down the days.   I say that because on Friday I will be attending yet another blogging conference.  I know you’re probably thinking I’m crazy for heading to two in one month, but let me break it down a bit and I think you’ll understand better.

A.  It’s a blogging conference.  How fun are they?

B. It’s affordable and I have an awesome roomie to share my room with while I’m there.

C. It’s in beautiful Asheville, NC in the heart of fall and leaf changing season.

and D. It’s a weekend alone with myself (and a couple hundred other women bloggers!).

Let me say that last one again, “It’s a weekend alone with myself”.  Now I realize if you don’t have kids yet this may not mean much to you, but if you do, then I know you completely understand the magnitude of that statement.   And if you don’t, believe me someday you will.  It’s been at least six years since I was able to spend a weekend alone and this month I’ve had the privilege to do it twice.  So call me crazy for heading out to yet another blogging conference, but I’m calling it a much needed weekend with me, myself, and I.

Of course, it’s not the weekend yet and the blog calls, so I’m popping up a recipe to warm up your Wednesday.  I’m a big lover of seafood enchiladas if they’re done right.  The problem I sometimes have Is that people tend to want to load them up in large quantities with cream cheese, cream and cheese.  They become so heavy that by the time you eat one, you feel so full you can barely drink down the glass of water you served along side it.  I decided I wanted to attempt to put together a version that was a little different from it’s more common counterpart.  Instead of highlighting the cream and the cheese, I wanted to highlight the seafood which is what should be the star of the show after all, right?  These enchiladas do have a splash of cream and some cheese sprinkled on top, but I think you’ll be pleasantly surprised to find that it’s more of a compliment than a takeover.

Quickie Curried Fish

I love antiquing.  There, I’ve said it.  I think I could honestly spend an entire day hopping from store to store and never get bored.  Unfortunately with three small but rather feisty bulls dancing around my every step, I don’t get to spend as much time in the china shops as I would like.

That being said, after enjoying a weekend away with 100 other food bloggers and learning more about the art of food styling, I realized I had an excuse obligation to get myself out to the antique warehouse (we’re talking 55,000 sq. feet of antiquing bliss!) and pick up some chic new bowls, napkins and other goodies to spruce up my photos a bit.  I’ve been having a field day with my new loot and my pictures are all the better for it.

You’ll have to wait a week or two to see some of these new little trinkets in action as I have about a week or two worth of posts to catch up on before the new stuff shows up on the page.  Keep your eyes open though and see if you can tell when the changes start to pick up.  I’ll give you a hint, there’s a preview on my facebook page as we speak.

One more note before we move on to the recipe.  I know that people have been having issues with printing my recipes off of Google Docs, so I’m testing out a new recipe sharing program today!  If you get a chance, check it out below the finished picture and let me know if it’s any easier to work with.

Alright, let’s move on to today’s dish.  I’ve been really excited to share this one on the blog; mainly because it only took me about 20 minutes to cook up,  it’s low fat, healthy, and extremely tasty!  What more could you possibly want in a meal?  Let’s curry up some fish!

Tuna Mexi Melt

If there’s one thing this city is missing, it’s authentic Mexican and Tex Mex food.  There I said it.  And no, On the Border doesn’t qualify as authentic (my apologies to all the On the Border lovers who might be reading this).  Scott and I are constantly on the look out for new Mexican options in our area to try out.  Some we discover, others are recommended.  So far none have measured up to the expectations of what we are hoping to get out of our Mexican restaurant meal experience.

I realize how this sounds.  And if you have officially declared us Mexican food snobs at this point, I will wholeheartedly agree with you.   I can’t help myself though.  Before living in Charlotte, Scott and I spent six years in Texas and dang!  if the Mexican and Tex Mex isn’t some of the best food you’ll ever put your mouth on.  Ever.  It’s one of the many things I truly miss about living there.

We’re here in Charlotte for the long haul though, so our search for the perfect Mexican restaurant will continue.  Until we find it, it’s up to me to put together Mexican and Tex Mex inspired dishes that my family will enjoy eating.  Enter in the Tuna Mexi Melt.  Because honestly, why have a plain old tuna melt when you can Tex Mex it all up and make it mucho mejor (that’s much better for you gringos out there).

Listo?  Vamos a cocinar.  Let’s get cooking.
