Family Friendly Fridays: A Review of 400 Best Sandwich Recipes

Who loves a good sandwich?  I know I sure do.  That’s why I was delighted when Alison Lewis asked me to review her newly published cookbook; 400 Best Sandwich Recipes.  As soon as I received it, I knew it would become one of my go-to kitchen favorites.  With everything from the classic club and sloppy joe, to international flavors you might not have thought to put together on your own (think Banh Mi, a Vietnamese sandwich containing pork, radishes and pickled carrots), to an extensive list of condiment recipes, this book has it all.  She even throws in a handful of dessert sandwiches that are guaranteed to get your sweet tooth dancing.  The best part is that the majority of recipes are quick, easy and healthy.  Definitely my variety of cookbook.

Kicked up Slow Cooker Chili

I realized this post is coming out a bit late today.  Between the company I’ve been hosting over the holiday and the nine hour drive up to Ocean City yesterday to visit the other half of the family tree, I just haven’t found the time to post like I thought I would.   I’m here now though and ready to cook up a little chili.  Who’s with me?

I realize everyone has their own recipe for this warm winter dish so I hesitated to share mine, but I did add a few ingredients in that might not normally be added to chili and it was a winning combination so I figured I’d post it up and pass on a few ideas for different ways to kick up your go-to chili recipe.

One of those winning ingredients was a jar of roasted red peppers.  These little red delights had been taking up a spot in my pantry for some time while I waited for the perfect recipe to use them in.  Chili night came around and I figured the sweetness of the peppers would be a nice compliment.  Having made this recipe twice now, I can say with confidence that they didn’t disappoint.

This recipe is great for all occasions; from a busy weeknight to a super bowl party to a holiday dish.  I cooked it up for our company over Christmas along with some sweet honey corn bread (recipe to come!) and it disappeared quicker than I could put it out on the table.

A blast from the past: Cheesy Turkey Meatballs

I think there is a special place in the after world for people who spend their days creating viruses for the sole purpose of destroying other people’s computers.  My computer is 100% completely blotto right now; to the point where I can’t even bring up Windows.

It all happened so quickly I barely had time to realize.  One minute I’m hunting around the internet for a recipe using a whole chicken and tomatoes (it was delicious by the way) and the next I’m staring at a black screen wondering what just hit my computer.

As a result, I’m now operating on my 6 year old’s  7 year old Dell computer with no picture editing software and no access to my server where I store all my pictures. I’m sure you can hear the whining violins setting in about now, no?

So, I’m going to do the only thing I can do at this point.  Run around the neighborhood cursing the virus gods, and then come back inside and, with as much grace as I can muster, throw up an oldie but goodie as a place holder until we can get the problem solved.

I looked back at the past 10 months (can you believe it’s been that long?  I sure can’t!) and decided I would revive my Cheesy Turkey Meatballs for another run at the glory.  I picked this recipe, because not only are they delicious, kid friendly, and easy, but they will make a great appetizer for your upcoming holiday soirees.

Turkey Goulash

I don’t know about you, but for me the best part about the days following Thanksgiving are all the yummy leftovers.  I was lucky enough to not have to cook the meal this year (my SIL took on the job and put together an amazing spread!) but I did still manage to snag a bag of leftover turkey and we’ve since been having our fill of some amazing sandwiches.

The time will most likely come, however, when you’ve had enough of turkey sandwiches. If you’ve reached that point along with me, then it’s time to check out a yummy one dish meal that I’ve cooked up for just such an occasion.

This dish makes quick work of any leftover bird you have lying around and tastes delicious to boot!  If you make it during other parts of the year when you don’t have leftover turkey available, simply substitute ground turkey in it’s place.  I actually used ground turkey in the pictures as this recipe was made before the big bird eating day.  Either works well and makes a hearty one dish meal.

Turkey Apple Bacon Grilled Cheese

Another day another sandwich I always say and today I’m bringing you back to an old classic.   If you’ve lived in Charlotte for any period of time in the past 10 or so years, then you’ll know it’s a city of transplants.  While native Charlotteans do exist, it’s rare to find them.  Most people living here have moved from other areas of the country and especially large numbers have come from the North East and the New York area in particular.

The plus side to this migration is that we southerners get to experience some delicious foods that we typically would have to travel north to find because several of these New Yorkers are making the choice to open restaurants and share their cooking talents with us non-northerners.  I can think of at least one pizza place off hand that serves A.mazing New York pizza.

And then there’s the New York Deli by our house.  I’m sad to say it closed almost as quickly as it opened, but when it was alive and kicking we would visit it for breakfast/lunch after church almost every Sunday.  On the menu they had this grilled turkey and cheese sandwich with apples and bacon that I could never resist.  Something about the sweetness of the apples with the savory and salty of the meat and cheese reeled me in every time.

Of course, it being a deli sandwich, they would typically put about a half a pound of shaved turkey, and make the sandwich so big and delicious you could barely bite into it.  I wanted to make my sandwich that big for you, really I did, but in the end I…

1. just don’t eat that much meat in one sitting

2. didn’t want to spend that much money on a turkey sandwich (yes the secret’s out, you now know that in addition to being lazy I’m also cheap) so my turkey addition is a little more paltry than it’s one inch thick deli counterpart.  Have no fear though, it’s just as tasty.

What’s Labor Day without a Burger?

Happy Labor Day!  I hope everyone is enjoying their extra day off this weekend.  I know we are.  As you read this, we are hopefully either on our way to Grandfather Mountain, already there, or on our way back.

Why “hopefully” you ask?  Because this trip was originally planned for Sunday.  Just picture it.  The weather is beautiful, the car is packed, everyone is in their seats and ready to go.  We drive out of our neighborhood, stop to get gas, pop on a movie for the two hour drive and BAM.  Just like that Nicholas loses his breakfast not once, and not even twice, but three times in the back of the car.
