Saucy Mama Breakfast Burritos + a Giveaway

I can never resist the temptation to join in a good ol’ recipe contest.  Saucy Mama recently threw down the gauntlet to me and a handful other talented food bloggers to see who could dream up the best five ingredient recipe using select Saucy Mama condiments.  With prizes and bragging rights on the line, I just couldn’t let the opportunity to throw my hat in the ring pass me by.

Let me just say, it is hard to come up with a recipe that only uses five ingredients.  I’m the kind of cook that likes to add a dab of this and a dollop of that until I get things just right.  Some of my creations are downright embarrassing there are so many additions!  But I wasn’t going to let that deter me.  I’d been wanting to put together a breakfast burrito for sometime now, and it struck me.  Why not add a bit of the southwest dressing to my eggs and see what happens?  The result is a simple and satisfying breakfast burrito that whips up in no time flat but tastes like you worked all morning putting it together.  Throw a little cheese, bacon, and cilantro into the mixture and you’ll be licking your lips and heading back for another round.

Family Friendly Friday’s: Banana’s Foster French Toast

When I say the words “Bananas Foster French Toast”, what thought comes to your mind?  For me it’s one all encompassing word.  Scrumptious.  The idea for this recipe was first inspired by a morning meal we partook in at one of our favorite Charlotte breakfast hangouts; The Flying Biscuit.  Oh man, if you ever go, make sure to get the creamy dreamy grits.  I think I literally break out into song right there at the table every time I take a bite.  Never have I had a better grit.  Ever.  But I digress.  This particular morning we were there, they just happened to have a list of breakfast specials and  the one that caught my five year old’s eye was the banana’s foster french toast.  Alright, I’ll admit, it caught my eye too.  What’s not to love?  Thick slabs of french toast, covered with caramel coated bananas and topped with fresh whipped cream.  Uh, yea.  Twist my arm.

I’ll be honest when I say that we ate breakfast and that was the end of it. The thought never even crossed my mind to create a batch of my own.  And then last week, I was stopping by Lyndsey’s blog, Pinch of Yum, and she had the most delectable looking Caramalized Banana and Fig Oatmeal.  Who knew oatmeal could be that exciting?  I left a comment on her blog and mentioned the bananas foster french toast. Next thing I know I’m getting this comment on my Greek inspired slow cooker chicken in return:

“I love the addition of dill. Mmmmm… dill!! Also, I’m a tad disappointed that your post wasn’t about the bananas foster french toast! Will we get to see that anytime soon, I hope?!”

Hmmm.  First the restaurant, then the oatmeal and now the comment.  Yep, this recipe pretty much hit me upside the head and said make me.  NOW.  So that’s exactly what I did.  Prepare to get your breakfast tooth, your sweet tooth, and your “I can now die a happy (and full) woman (or man)  tooth on, cuz this recipe is about to take you to a whole new level of breakfast and give new meaning to the word scrumptious.

In this dish, bread choice can make make or break you, so for heaven’s sake, don’t grab the wonder bread sandwich loaf.  Get yourself a beautiful hunk of challah or hawaiian bread that you can cut thick slices from and do just that.

Irish Soda Bread

Would you believe me if I told you that I had never partook in a slice of Irish Soda Bread until I cooked up this recipe?  I tell ya, this is what I love about food blogging.  It forces you to get out of your rut, off your behind, and into your kitchen.  It causes you to read Food and Wine, watch The Food Network and browse through your Citipass coupon book for recipe ideas while waiting for your child to finish up a class (Oh yes, guilty as charged.  I can tell you with complete confidence that at least a handful of recipes I’ve shared on this blog have been inspired by my child’s annual school fundraiser).  And you thought it was all about the coupons.

But back to the topic at hand.  Irish soda bread.  Why I haven’t cooked up a loaf of this bread sooner is beyond me.  It’s quick to make; think no waiting for the yeast to rise. It”s easy enough for even an amateur bread maker to put together; it’s about as simple as mixing together the ingredients, forming it into a ball, and baking it.  And the final result is a moist, flavorful bread that tastes like you spent the entire afternoon pouring your heart and soul into it.  What’s not to love?

Traditional Irish soda bread consists of four main ingredients; Flour, baking soda, salt, and buttermilk.  That’s all there is to it.  Most recipes these days fancy it up a bit with fruit, sugar, and the like.  This version is no different.  I added a little honey for sweetness and some caraway seeds just because.  Do we really have to save this recipe for St. Patrick’s day?  Because I could easily see this bread becoming a staple in our house.

Family Friendly Fridays: Chocolate Churros

I have had this recipe on my radar for some time now.  It all started when I resolved to create a list of 100 “must make” dishes in the name of organization and pop it up on my Facebook page.  I added churros to the manifest and concluded almost immediately that I needed to make them ASAP.  And here I am, four weeks later, and they’re finally up for all to enjoy.  I’m honestly not sure why it took me this long to make them (although I’m positive my husband would have some valuable insight to share regarding said procrastination habits).  They’re simple to make, the kids loved them, and the hubby literally ate half the batch upon walking in the door from work, proclaiming it be an appetizer before dinner.

I personally loved the addition of chocolate to the mix.  I realize that I  “de-authenticated” the recipe a bit by doing so, but my goodness, this is chocolate we’re talking about.  I’m sure once you’ve tried a couple you’ll be able to forgive me for the indiscretion.

Fish gone Thai

So I got a bit creative the other night and decided to try and concoct a Thai inspired fish dish.  I’m not sure what did it, but I’m thinking it must have been the coconut milk that I bought at Trader Joe’s earlier in the day.  If you haven’t already guessed, I’m a Trader Joe’s ADDICT.  We don’t have a lot of fancy schmancy (and affordable!) food stores here in Charlotte.  It’s something that I really, really, REALLY miss about living in Dallas.  The food stores there were amazing. Central Market, Sprouts, Market Street, Whole Foods *Sigh*.  But I digress.  We’re here to make some dinner so let’s break out the fish!  Here’s what you’ll need to bring my inspiration to your dinner table:

Ingredients Needed:

1 Pound of White Fish (I used dover sole)
3/4 Cup of Flour
1 Cup of Panko Bread Crumbs
2 Eggs
1 tsp Lemon Grass
1 tsp Turmeric
1 tsp Salt
1/2 tsp Pepper
2 Cloves of Garlic
2 tsp of Cilantro (1/8 cup Chopped Fresh)
Olive Oil for cooking the fish in

The first thing you need to do in order to create these little beauties, is to get out three separate dishes.  In the first dish mix together the flour, salt, pepper, lemon grass, and turmeric.  In the second dish, beat the two eggs and then stir in the garlic and cilantro.  In the third dish add your panko bread crumbs.  Here’s what you’ll have:

Now, grab a large skillet, turn your heat on medium high and add in a few swirls of olive oil to cover the bottom. Dredge your fish; first in flour, then in the egg, and finally in the breadcrumbs. Add the covered fish to the skillet and cook for 3-4 minutes per side or until cooked through and golden brown depending on the thickness of the fish you use.  Here’s what it should look like.  Are you getting hungry yet? 🙂

If you use a thin fish like I did, you will need to do multiple batches.  If that’s the case, you should change out your oil at least once or it will get burned after a couple batches from the random breadcrumbs and fish pieces that stay behind.

And here’s the finished product.  I served it up with coconut curry rice, fresh broccoli and a lemon wedge.  And yes, the lemon, broccoli and rice (with the above mentioned coconut milk) were all from my good friend Trader Joe as well.

Fish Gone Thai

Total Time: 30 min

Ingredients:
