Lemon Almond Cookies

I adore spring. It’s not just the warmer weather I find appealing, but the gentle rousing of nature as it begins to wake up and once again come back to life.

Here in Charlotte it begins with the Bradford Pears.  You get up one morning and walk through your neighborhood to notice that suddenly, as if on cue, the trees have the most beautiful white flowers budding from their branches. This in itself is a glorious site, but then it gets better.  A handful of days later you walk down that same street, but now the leaves are pushing their way past the flowers causing a gentle rain of petals that my kids liken to a “first of the season” snowfall….

Lemonade Scotchies

Lemons are a hot commodity in our house.  I buy them by the bagful at the beginning of each week and I’m lucky if they last long enough to squeeze a wedge on my Friday night fish dinner.  Alex, my middle child, especially loves the tart juicy fruit.  He’ll happily grab up a hunk of lemon and eat it like an orange, leaving only the rind in his path.  My husband enjoys them as well with the rather large exception of dessert.  Lemon bars – won’t touch ’em.  Lemon meringue pie – forget about it.  Lemon sorbet – you’d think he might make an exception, but you’d be sadly mistaken.  Personally, I think he’s nuts but the result is usually more dessert for me (and the kids of course, if and when I decide to share).

With this week’s stash of lemons, I determined that I would attempt to create some form of lemon cookie.  Alex was beyond excited with the idea of a lemony baking endeavor.  After all, he knew he would have a few squeezed lemon hunks he could compost for me after the fact.  My husband, bless his heart, didn’t share my five year old’s excitement, but I promised him some form of chocolate decadence would enter the next dessert creation, so he relented.  In the end, the beloved lemonade scotchie was born.

A perfect combination of tart lemon and sweet butterscotch, these cookies are a match made in heaven.  If you’re feeling the need to satisfy your lemon craving, the first step you’ll want to take is to cream up a little butter and sugar.  To that mixture you’ll add in a little almond and vanilla extract and an egg.

Pistachio Crusted Salmon with Ginger Lemon Cream Sauce

Let me just say, this wasn’t the dish I had originally planned on putting up today.  I had planned to put up the bacon blue cheese quiche that my MC facebook buds have been patiently waiting for.   But then this pistachio crusted salmon came along.  It wasn’t a researched recipe idea.  Just a night where I needed to cook some dinner.  I knew I wanted something involving salmon, and I happened to have a bag of pistachios taking up rent in my pantry.  The idea started simple and grew from there.  I’d make a pistachio crusted salmon.  Done.  But what’s a crusted fish without a sauce right?  I slid out my beloved Flavor Bible and got to work.  Lets see…. ginger pairs with lemon pairs with basil pairs with salmon.  And there it was, my perfect sauce.  Unique yet flavorful, creamy and simply perfect.

Cafe Style Lemon Poppy Seed Muffins

Summer break as an adult with a handful of children is difficult work.  Just this week alone we’ve had playdates at friends house’s, gone swimming (4 times), bounced a morning away at Monkey Joes, ventured to the movies, treated ourselves to frozen yogurt, treated ourselves to dinner, and motored our way downtown for a morning at the Discovery Place (our resident science museum). The kids are having a summer break they won’t soon forget.  I,  on the other hand, need a well earned time out from all the fun.

Thank goodness for hot coffee and a muffin the size of my head.  These treasures have been making my mornings a whole lot better for the past few days.  Simply slice one in half, grab a large vessel of steaming hot caffeine and who knows where the day can take us?  I’ve conquered lemon poppy seed and my next challenge is obtaining blueberry perfection.  All I know is if I have one of these treats at my side, there’s nothing I can’t handle.

If you’re in search of summer break sustenance, then you’ll need to cream up a little sugar and butter and throw in a few goodies such as eggs, vanilla, and lemon in both the zest form and the juice form.

Revisiting Rice Krispies and a $100 Giveaway!

Remember these critters?  Welcoming their cute little faces back to the blog can only mean one thing; it’s time for another Rice Krispies competition!  With the rising mercury and school free, lazy long days officially here, the new theme for this round is… you guessed it, favorite summer pastimes.  As we prepare to introduce our newest entry into the mix, I wanted to take a minute to reflect back on our recipe from the first round.

When you strip away the feathers and facial features (apologies to my furry and feathered friends) , what you’re left with is a refreshing and simple lemonade rice krispie treat that can be shaped and molded to your liking or simply cut into squares and served up as is.  As you can see with mine below, I cut them into letters and had a little fun with my picture.  I’ve attached the basic recipe at the end of this post, so feel free to whip up a batch and let your own creativity flow; if you can keep from eating them all first, that is.
