Grilling season is here once more and having grown up a diehard cheesehead myself, I know that the flame kissed meal is an essential part of summer time eating. Who doesn’t love a bratwurst hot off the coals? Combine it with a melted topping of Wisconsin cheese and you’ve got yourself one heck of a tasty treat.

If you’ve never thought of grilling up a pizza over the coals, now’s the time to try it. Zip up your cooker as hot as it will go and you’ll discover a magic formula for crispy, delectable pizza crust that will rival any thin crust joint you’ve frequented in the past. If you’re not in a grilling mood or are looking for a quicker option, this pizza can be made in the oven as well. Simply grab a store bought crust, add your toppings and cook until the cheese is melted and golden bubbly brown.

Bacon and Brie Flatbread

You honestly don’t realize how much you depend on the internet until it’s no longer there. I spent the majority of my day on the phone yesterday doing battle with technical support for one issue after another. You think it’s fixed and then blammo. Out it goes again. I finished up the marathon with my third friendly voice telling me that I’d have to wait until the next afternoon for a certified technician to come out to my house and assess the damage. Bugger.

So what’s an internet addicted blogger to do? I cleaned the bathrooms, swept and mopped the kitchen, made German chocolate cake cookies (A.mazing little specimens), finished the second Hunger Games novel and read my way through the February issue of Southern Living; all before the boys made their way home from school.

Family Friendly Fridays: French Inspired Flatbread with Caramelized Onions and Pancetta

Where does your inspiration come from? I fancy to say mine comes from extensive visits to far off and exotic cultures, ideas garnered while wandering around the inner workings of the CIA (that’s the Culinary institute of America, not the windowless government agency lacking even a pinch of food-based stimulation), and my daily afternoon tea break with Brad Pitt and Angelina Jolie’s personal chef.

The less sexy reality of it all is that this French inspired flatbread was a revelation of my weekly visit to the local Trader Joe’s. Call me crazy, but some of my best ideas spring from that little grocery store with the brimming flavor profile. While perusing the frozen food section, I came upon this very flatbread. I looked at it for a minute and then a minute more. “I can make this.” I thought. Not being one to turn down a challenge, I decided to plunge in; crust first.

I quickly discerned the first step in creating French inspired brilliance to be the caramelization of an onion. If you’ve never done it before, don’t be afraid, I promise it’s real easy. You ready?
