Can you believe that Thanksgiving is less than a week away? I love the holiday season but dang if it doesn’t feel like time speeds up with all the excitement going on. This year we’re hosting the big day which means we’ll have seven additional mouths to feed including this precious little one. Meet my new nephew Alden Jacob….

In case you missed it, Puxatawny Phil saw his shadow this year and as a result, we’re officially entitled to six more weeks of winter.

At this stage in the game, that can feel like a lifetime. I find myself dreaming of swimsuits and summer time. I pine for beach days and mountain camp outs with my boys. Heck, even spring break would be a welcome change from the biting, mostly grey days of winter.

Less than a week until Halloween. My kids are practically busting at the seams with excitement. Nick, my oldest, plans to be Luke Skywalker, Drew is going to be a pumpkin, and my five year old? Well, he’s made the decision to be a marble. But not just any marble mind you – a rainbow marble. I’m sure you’re wondering how I’m going to achieve this feat. That’s good because I’m wondering a bit myself. I’ve come up with an idea to paper mache a rather large balloon, cut out a few holes for appendages and hope for the best.

Salsa Verde
Our family is addicted to loves salsa. Take my kids to a Mexican restaurant and we might as well save the money on the meals because they’ll scrape the dishes of salsa clean and ask for more before the drinks even arrive at the table. My husband practically inhales the stuff. And for him, the hotter the better. He’s the one asking for the “muy caliente” batch sitting in the back of the kitchen. You know the one; it’s usually deemed to have a little too much kick for American Gringos. Well not my husband. He relishes in the deliciousness of a good salsa induced sweat.
It can be said that salsa is the Mexican version of ketchup and I believe it. It tastes good on (and in!) just about everything. Give me a bowl of salsa, some chips and a beer and I’m as happy as a girl can be. Recently, I’ve really been getting into salsa verde. It has a real “limey” flavor that you just don’t get from regular salsa. And the best part about about this green nectar of the Gods is how truly easy it is to make.
